Ok so two things -

1) my medical at Knightsbridge was on Thursday (14th).  My embassy interview is on Wednesday (20th).  I assume that they will give me a “successful pending medical results” as the medical results probably won’t be with them in time?

2) my fathers name is not on my birth certificate.  Because it’s a Scottish certificate, it is long-form but I will just be honest and say that my mother was 16/17 when I was born and my father was out of the picture and I’ve never met him.  I assume this will be alright(?)

So grateful for any help and advice!

You are correct on both assumptions. Medical results are unlikely to reach the embassy in time so you will (hopefully) be approved pending the medical results.

An unknown father is not a problem.  I had a slightly similar issue with the DS-260 in that whilst my father is named on my birth certificate and my parents were married at one point, my father abandoned us later and his whereabouts was completely unknown. I wasn’t even sure if he was alive or not. It happens quite often and it isn’t a problem.

Another one - how long generally does the London embassy take to courier the passport?

I got mine back in 7 days from my interview. It'll be longer for you with your pending medical results
