purchase 3 one-way tickets at the same time, 1 for you to get to Viet Nam, 2 for you and spouse to exit Viet Nam, you then satisfy the requirement for a visa to enter and exit Viet Nam and have seats together for your return

I go to Vietnam all the time and never had a problem. You get you visa on line before you go. I also pay $25.00 and I get visa processed in 5 min. They understand the tourist dollars are the best. You could also buy a flex date ticket.

it's difficult to get the return leg on a round ticket in conjunction with a one way ticket, it is a little more expensive to do it this way but you can customize your flight easier. It's the easiest method, just not the cheapest option

Buy a ticket to VN that works for you

Buy 2 tickets from VN that works for you and spouse

I am a bit late reading this post but for anyone else who is traveling to Vietnam, onward proof of travel is NOT required for entering Vietnam. A few countries that absolutely require documented proof of onward travel are Peru, New Zealand,  United Kingdom, United States, Philippines, Indonesia, and Brazil.

Sometimes those governments listed above don't even really check for proof of onward travel however, your airlines of choice might. The reason the airlines will check is because they are responsible for your onward travel and responsible financially. I am only referencing Peru, New Zealand,  United Kingdom, United States, Philippines, Indonesia, and Brazil.

If you are very concerned about proof onward travel to Vietnam, you can easily book a cheap bus ticket to Cambodia (maybe $20USD or less) and use that as proof of your onward travel if you are concerned about the one way air ticket to Vietnam. This can be easily done at home from you computer and print out your reservation bus ticket and have ready should the airlines ask you for onward travel proof. That way your one-way ticket will be just fine if you are very concerned. Obviously you would be throwing away the bus ticket paper once arriving in Vietnam and thereby wasting $20 USD. Also keep in mind that if traveling to Vietnam on a tourist visa you are only allowed to stay for up to 90days anyway and is notated as such in your passport....but in reality you will be fine.

Call the airlines you are flying with and ask them if they (meaning the airlines) you are flying with will require onward travel because Vietnam will not require it.

First I would like to thank Ben &  Zian. Theyseem to give very direct answers in a respectful way.

Do not purchase anything until visa is in hand unless you know you can without charge change the flight easily.. So many people have lost money on non refundable or unchangeable flights.

When I go to Vietnam I always fly Asiana (it's a South Korean Airlines). The have great fairs and wonderful service. I fly out a LAX and the typically have the shortest layover times. I get a Flex ticket, cost a little more but less than change fee. Also I always join the rewards program for airlines I fly or just one in the 3 major partner groups (SkyTeam, Star Alliance, or One World (when ever I see their big signs in airports I think of the Empire trying to take over Universe) I always get free upgrades on Asiana (even on my first Flight without ever asking).

Join some rewards group, fly their members when you can, and explore flex date tickets. Last but not least heed the cautions of others about jumping the gun.

I wish you both a good journey.
