Steaks on the grill and cold beer is always a favorite of mine. Summer, Winter -- doesn't really matter. Using the grill year round is reason enough for a man to live in Florida.

Actually, I was just thinking....Craig likes the more "warm weather" type of stuff in general anyway (as opposed to rich comfort food type of things) and I've been wanting to/trying to lose some weight....AND you normally just don't feel like eating meals that are so heavy in the summer anyway.

This sounds awesome. The Whole Foods fresh salsa is AMAZING. We had some last night...

Grilled Veggie Tostadas with Fresh Salsa

Grilling brings out the natural flavor and sweetness of zucchini, yellow squash, red bell pepper, eggplant and onion in these savory tostadas. Grill whole wheat tortillas for a crispy base and top with fresh, vine ripened tomato salsa, sliced avocado and a squeeze of lime.

Serves 6

* 3/4 cup olive oil, plus additional oil for brushing tortillas

* 2 tsp chili powder

* 4 cloves garlic, minced

* 1 tsp salt

* 2 large zucchini unpeeled, ends trimmed

* 2 large yellow squash unpeeled, ends trimmed

* 2 red bell peppers

* 1 large eggplant, unpeeled, ends trimmed

* 1 large onion, cut into thin rounds

Salsa

* 1 lb ripe tomatoes, seeded and diced

* 1/3 cup finely chopped fresh cilantro

* 2 TB freshly squeezed lime juice (about 2 limes)

* 1 jalapeno pepper, seeded and minced, more or less to taste

* 1/4 tsp salt

* 1/8 tsp freshly ground black pepper

* 6 whole wheat flour tortillas, 6-inch-diameter

* 3 ripe avocados

* lime wedges for garnish (1 lime)

Grilled Veggie Tostadas with Fresh Salsa

Prepare the vegetables: cut the zucchini and yellow squash lengthwise into 1/4-inch thick slices. Seeded, derib and cut the green bell pepper into 1-inch wide strips. Cut the eggplant into 1/4-inch thick rounds. Cut the avocados in half lengthwise, peel and remove the pit removed, slice thinly.

Preheat the grill to 375°F, a medium-hot grill. Mix the olive oil, garlic, chili powder and salt in a large shallow bowl. Add the zucchini, yellow squash, bell pepper, eggplant and onion to the bowl. Using your hands, rub the seasonings into the vegetables. Grill the vegetables in batches until lightly charred, about 4 minutes per side, or until the vegetables are tender.

Combine the tomato, onion, cilantro, lime juice, jalapeño, salt and pepper in a nonmetallic bowl, and toss to combine. Taste and correct the seasonings. Serve immediately, or cover and refrigerate for up to two days. Toss before serving.

Lightly brush both sides of the tortillas with olive oil. Grill the tortilla until lightly charred on both sides, about 3 minutes total. Place 1 tortilla on each plate. Distribute the vegetables equally over the tortillas, top with salsa, sliced avocado and lime wedge. Serve.

Place on barbeque until lighty heated. Optional : pour beer onto said steak for that prefect taste, but not too much, you don't waste beer.

Crack open a(another) beer.

Eat steak and drink beer.

Open mouth and roar like a man.

Optional put a vegeburger on for the wife.

We always do wednesday night golf at my parents house. Basically a middle of the week BBQ and a reason to drink beer.

Last night I made coleslaw..I cheated and used one of those pre made jar coleslaw dressings. I used the whole jar for 15 servings and it was more than enough to dress it.

However this is wear I varied...

I added fresh basil and fresh cilantro and one fresh jalapeno pepper!

Everyone loved it! I mean loved it.

We are big on grilled tuna steaks with grilled asparagus. Or anything grilled with asparagus.

We do nice salads in the summer.

Last night I made a stir fry with fresh green beans, broc, sugarsnap peas, beef, and some pineapple. Was lovely. I skip the noodles or rice just cause....that is one of my favorite meals!

I also make a big batch of salsa..or pico rather...with black beans and corn along with ciltantro and all the other freshies...that is fantastic with grilled chicken and a salad or even in a pasta salad!

Now I am hungry!

YUM. I tried to make that tonight's dinner but Rey has already marinated a chicken breast with a southwestern rub for tonight... ah well, back to my Greek heritage tomorrow night then! I am stopping by Whole Foods on the way home and picking up some feta and pesto (wonder how the fontina would go over...)

Fontina is a very mild and non-controversial cheese. It has a great flavor and texture...mild like mozz but not so stringy. I love it, and a little of it goes a long way. It also melts very well. :thumbs:

I'm not big on cheese on meat. I didn't really like any cheese at all until two years ago, so I am discovering some cheese recipes that are pretty good... holy ####### though, I just looked up the calories in 1 cube of feta.... I guess cheese is cheese.

Cheese in American cooking can be excessive. I never use great big gobbets of it.

cheese is NEVER excessive. yummmmm

I'm a little confused, when I see sandwiches etc in the Us it generally always says "Genuine US cheese replica" or words to that effect, and I don't understand why the fast food outlets ask you if you want 'cheese with that' on everything, a fillet of fish does not need cheese ><

wow thats bad. where you buying those? the gas station? lol ;) thats worse than velveeta or cheesewiz!

The gas station is the source of all thats unholy :blink:

This reminds me of that commercial where the dad asks his son what he wants on his Tombstone pizza and the kid says "real cheese!"

How craptastic does a frozen pizza have to be to not include real cheese? It's almost as if they're proud of their pizza for being edible for humans...
