Do we need an entirely new Affidavit of Support for our interview? On the notice it says to bring a completed Affidavit of Support with evidence, unless already submitted.

A  new tax year has passed since we filed for Adjustment of Status,  so I was just wondering if we need a new I-864 form filled out as well as the most recent tax transcripts, or if they just want updated tax transcripts and would accept the original i-864?

Awesome - no problem, we'll just bring an entirely new one to be safe.

Currently we're using my wifes father as a joint sponsor, he's OK with this - but I was wondering if we could now use my income to get him off the hook? I read this (https://www.uscis.gov/sites/default/files/files/form/i-864instr.pdf) page 12, about half way down - which seems to say that I can use my income. Any thoughts?

It says you can use your income. Use it.
