Required Documents for the K1 Fiance Visa Interview

Timeline

Okay, so I plan to visit my girlfriend in the Philippines in July.  With that said, my girlfriend will have her interview for the K1 Fiance Visa around October to November.  I am required to give the following documents to my girlfriend for the interview: affidavit of support, tax returns from the past 3 years, the W2 from the past 3 years, pay stubs from the past 2 months, my bank statements, and the I-134 form.  At the time of the interview, I heard it's important to make sure the documents are recent.  So, my question is, in an effort to save money from having to ship the documents in the mail near the interview date, may I instead just bring the documents with me as early as July when I see my girlfriend?
