Departure by land at south of the border with Mexico, without reporting it.

So I was thinking about this hypothetical scenario: 

 

What would happen if, as a US resident, I leave the country at the south of the border without registering my departure and then I try to return to the US? Mexico doesn't register your passport, and neither the US does, so there's no record of you leaving the country.

 

How would an immigration officer know how long I was absent from the country? If I tell them "a couple of days" or "a couple of months", how will they know which is true? What if I'm gone for more than 6 months?

 

I know they might also ask for proof of my absent time, but if I don't have any proof, and they don't have any proof either of how long I was gone, how they proceed in a case like that? Would proof of utilities bills, cellphone bills, tax return, be enough?
