I know someone that came here on a K1 visa and applied for EAD first (Had to pay a fee) then applied for I485 later on.

While technically legal, the EAD submission from a K1 would have to be filed immediately upon entering, and would expire at the 90 day mark when the authorized stay under the K1 expires (I94).  As @Boiler stated, with the current processing times for the EAD being longer than 90 days, most likely the K1 I94 would expire before even receiving the EAD, so it would be a waste of money.

Regardless, this path is not even available to the OP considering they said they have been married for more than a year so I am assuming the K1 I94 has long since expired.

Its not harsh, but circumstances are different like everyone else. As a fiance we qualified at the 100% poverty level but with adjustment of status it changes to 125% which makes it harsh as again I'm under 2000 less, the reason for this is I was previously married but separated due to DV, I have my wonderful children that is the reason why we do not qualify. I currently work for the County/Government, its been a stable job for me 10+ years. I myself have done side jobs getting paid cash but that cant be counted per lawyer

The easiest option would be for you to get a second job temporarily. $2000 is very low - one day a week of cashier/retail job will give you that amount annually/your current  income would meet the threshold.

Find a co-sponsor. Even if you are super close to the limit but above it, there is a chance they might deny it. You need to apply for AOS before being able to work so your plan won't work. Find a co-sponsor ASAP.
