I want to have an airbnb host prove to USCIS that she hosted us for three months. Should I have her write and affidavit or could I have an email from her to me as a sign of as joint residency evidence?

Completley unnecessary, a couple living apart in separate countries will not be expected nor required to have joint residence.  Since Airbnb is only temporary accommodation, you were not “living together” and would not list that address on the I-130.  Instead, the proper way to answer that would be is “we have not yet lived together” or “visited on multiple occasions but have never lived together” for that section.

Correct but it is certainly proper and prudent to show evidence of time "spent" together in person.  Usually, the passport stamps in your passport showing you were in country with your spouse are sufficient for that, but you could also use your Airbnb receipt to supplement that.

With these new e-passports some countries are not stamping passports all the time. My spouse received a passport stamp for her entry to NZ, but I didnt. 

 

I can supply photos of us on our trecks. Receipts for accommodation and booking receipts for boat trips. 

 

If we have never technically "lived together" or shared bank accounts. What else aside affidavits from family, some receipts, marriage cert, and photos can I submit that would be helpful to show a bona-fide relation

Sounds good to me.  Newlyweds usually don't have most of the things on the "in addition to the required..." list.  Concentrate on evidence of time spent together in person.  Receipts and photos are good.  Even her stamp showing entry and exit from New Zealand combined with YOUR receipts for lodging etc. will be good.
