As stated the most recent job is fine, and no resume needed.

Nah, you don't need to include that job and do your best with other information you could remember. Just be honest with about everything except something 2 weeks of work that's not important for work information so I stated before the most recent stable jobs is good enough :)

Nope, no issue there.   The DS-160 isn't designed with the K-1 in mind, it is a generic from for the non-immigrant visa .. the K-1 is sort of a hybrid so some questions "don't fit well"

Hello!! I am filling up ds-160 on behalf of my fiancé. There is a part there where you have to put parents' info of the beneficiary. Unfortunately, my fiancé's father is not involved in his family's life since he was a kid and they only know his dad's last address which is in Italy. I don't know if we can contact his dad to ask his current address because both of them doesn't want anything to do with each other anymore. So for now I just typed: DO NOT KNOW on the Street and then Lucca, Italy for the city and country. Will this be okay once they check it during interview at embassy? I'm already getting anxious that they would deny him because of a missing info. lol. Hoping for somebody's insight regarding this. Thanks so much!

Unknown is an acceptable response when you don't know the answer

YMMV

I do agree ... UNKNOWN is acceptable when you don't know.

Here is a link to DS-160 instructions,   https://th.usembassy.gov/wp-content/uploads/sites/90/2016/04/ds_160_step_by_step_guide.pdf   (it may be from the U.S. embassy Thailand but still helpful)
