I am hearing that the Philippine embassy isn't accepting joint sponsors on a K-1 visa so that could be a problem there. Also IF they don't ask for the financial affidavit of support DO NOT offer that information as I'm hearing they don't ask for it all the time and haven't been for the past 2 or 3 years probably because we do have to file the I-864 affidavit of support form after the marriage, however do prepare your I-134 documents just in case of course. However it looks like your second job is your saving grace and so I could be wrong but they may look at what you make now vs. the past 3 years so honestly, I would not sweat it as mrandmrslee said earlier.

The visa in question here is the CR1/IR1.

First, there is no Philippine Embassy involved in an US visa process.  Second, the Consular Immigrant Visa Unit at the....US... Embassy in Manila, does not accept cosponsors for fiancee visas, but the certainly accept "joint sponsors" for spouse visas.  Don't compare apples and bear scat.  They taste nothing alike.  (from what I can imagine LOL)
