So a letter that states that we're approved?

Yes.  It is on Form I-797.  You get a first notice upon submission of the petition that provides you a notice that they received your filing and your case number (NOA1)

Your NOA2 comes with an approval

You may get another notice if they deem your petition deficient and they require addition information and that is referred to as an RFE

YMMV

Just to be clear, the NOA2 is a notice saying that your petition has been approved. After your NOA2, your case will be sent to the embassy and she'll have to do her medical and interview.

Good to know. problem is good luck scheduling a visit that coincides with the interview time, unless you can book a expensive ticket last minute.

Or alternatively, if there's pretty much no way you'll get an interview less than a month out (which seems to be the case in Moscow right now, so depending on timing I may very well be there with Anastasia in 2019).

If you can spend a month there or so, wait until noa2, and the NVC process is almost done, then you can look for a flight. Check the embassy specific forums to get a basic timeline for how long from NVC process to the interview will take. You should be able to estimate interview within a 2-3 week window.

I just don't want to book a flight last second because prices are going to be crazy expensive , tickets where I am from can range from 700-2000 that's why I am trying to see my best options.

Unfortunately, the downside of going through immigration is that there is no hard set time period of when things will be done. We can tell you it will take 7 months but it could end up taking over a year due to other factors.

Even if she has an interview date, she could get a refusal because of missing documents or get put into administrative processing for a few weeks.

You are at the mercy of the unknown in regards of time.

My fiancee was pulled into secondary inspection upon her arrival, so I was not able to "help" her at the POE.  They have interpreters available to assist

We were lucky in Atlanta.  I was allowed to go with my fiancee through the entire POE process.  Took about 3 1/2 hours!  (Not really sure if they initially understood I was her American fiancee however)
