We've finally made it to the part of the process where I'm ready to book my interview in London and it seems I have a limited number of dates I can choose from (at the moment there are 4 dates available, all for the end of May). Is this normal, and are the dates that I can choose from in some way linked to the information in my petition?

Unfortunately, I will already be past the expiry date on the confirmation I had from the NVC (11th of May) but I understand from the embassy website that this should be OK as long as I provide confirmation from myself and my partner that we are both still intending on getting married once I travel to the US. Does anyone know if there is a limit to how far past this expiry date you can book an interview? My partner is coming to the UK to visit at the beginning of July and I was wondering if there was any chance I could hold off booking my interview until then as it will save me booking extra time off work and it means I will be in London anyway!

Any advice welcome. Thanks in advance. :)

Yes you can hold off. July won't be available yet, so you just wait until maybe late May for those to open.

Only the American has to submit a new letter of intent. Don't forget the "free to marry" part as well as "intend to marry".

If the visa interview is scheduled more than 4 months from the date the petition is approved, the applicant is required to provide an original letter from the petitioner, confirming that they both remain legally free to marry and that they intend to do so within 90 days of the applicant’s entry to the United States.  There is no requirement that the letter be notarized.
