Switched jobs during K1 Proccess, need a co sponsor?

Hi everyone, i'm confused as wheter we will need a cosponsor or not

 

My fiancé switched jobs right after we got our NOA2, we got it on March 27th and he started his job on April 1st. At the time of the interview, I estimate he should have no more than 2 months paystubs, and he also has no saving on his bank accounts. However, his employer can write him a letter stating that this job is permanent and that he'll be making about $48,000 a year. He also made about $43,000 in 2017 as stated on his tax return, and he has no dependents, I would be the only one. He made much more than 125% over poverty levels on the 2 years prior as well. 

 

 

Would the tax transcripts suffice as income proof?  (Also, can you please tell me if we should download the TAX Return Transcript or TAX Account Transcript from the IRS website? I am interview in Mexico)
