For listing residences for the past 5 years on the i129f form, how thorough do you need to be?

My fiance and I backpacked through South America for one year. We had tourist visas in the countries we staid in. We did stay in certain places for around a month or two, which I don't consider to be residency, but I don't want this coming back and biting us in the butt. Also, should I include my address from my 6 week study abroad program (also while on a tourist visa)?

You didn't reside in those countries if you were both on tourist visas.   That said when you fill out your letter of how you met and how front load your application with relationship proof indicating that you backpacked around and an overview of what countries you were in as well as providing evidence (passport stamps?) that you were together during the trip

Note also that you may choose to put in the the blank(s) for other countries you've resided in something like this....  *** See Attached Sheet 1 ***

And then attach a sheet showing dates and countries that you stayed in during your backpacking trip along with a note that indicates at no time did you have a residence permit for those countries
