This is not so much on the in person interview. But my fiancee told me that she has heard of people from Immigration going to all the home living address and working addresses and interviewing neighbors and co workers too. Has anyone experienced this or know if this is part of the process too?

Like USCIS going to people before the K-1 interview? Or during the AOS phase after the marriage and all? During the I-129f petition phase, never heard of it myself personally... during the AOS phase, yes I've heard stories of people being talked to. Is it always  done? No; but sure can happen.

I'd have to ask her what type of visa it was for. Maybe I can get a hold of the person who was doing the visa process. But she did say they went to a living address and asked neighbors how long she lived there for and other questions.

Not very often, but I have seen posts about USCIS going to a physical address to see if things are genuine. It is possible, they have the right to do this if they believe things aren’t quite right.

For a K1? Naa. The most invasive interview you can get is a Stokes interview where they can ask very intimate questions.

True but a Stokes is a second chance green card interview and does not occur during a petition review or visa interview

YMMV

They don't have manpower to do that on a routine basis.  It seems to be a popular story twist on some TV sitcoms.  Don't get me wrong, it can happen as mentioned above, if they find something suspicious.  The garden - variety applicants don't hear from USCIS at all except for the NOA's or RFE's.
