If the question your wife asked was "Can we work or send our kids to school on a visitor visa", then it really, really appears your intent was to misuse your B visas...if the CBP officer had allowed you to enter, he/she would have been negligent in their duties.....

 

Will it affect visits to Canada?  Possibly.  I have read that US and Canada share information. In what country do you currently reside?

what i do not understand from your post is the children were not with you,  so you could have proved no way was your intent to stay and AOS for them to attend school

but your kids are in Canada,  so where are you and what country is your home country?

Yes, but the reference was with regard to visa application information and entry/exit information. The US has an arrangement with Canada to share this information.

I know this does not help the situation at all, but how does that happen? Do they literally just take the phone and then say "Oh wait, can you unlock your screen real quick, I want to go through your messages" Something seems off.

If they request access to the phone, you either comply or you don't...and face the likely consequences of (at least) being denied entry. Nobody knows yet what made them want to see the phone in this case, though. Something tipped them off (either known or unknown to the OP).

It reminds me of a case where they checked a child's backback and found US textbooks because they were planning to take classes...nobody knows what tipped them off to even check that, but something triggered it.

They normally don't do this unless they have suspicions of something possibly sketchy going on (sometimes can just depend on how people respond to their initial questions when crossing the border), and then secondary questioning happens.

 

You can refuse their request to look through your phone/computer/tablet...but pretty much the person makes themselves look worse because it then heightens POE suspicions you are hiding something.
