Also, as with many things, resistance builds up.  If handling raw chicken daily, you WILL get sick, for the most part.  Be careful all you want, but eventually you'll wipe some bacteria on a mucus membrane.  Just like an immunization,  some will resist,  some will get sick.  (Been there,  and it's not fun).  But after you get sick, there is more immunity I believe.  This anecdotal evidence comes from handling LOTS of raw chicken daily in my distant past.  Today, I try never to handle raw chicken then touch anything else prior to washing.

 

Salmonella does not exist in the meat mostly because of immunizations.  Only a sick chicken, or poor packing practices will infect a typical piece of meat.  Leave an untainted piece out long enough at warm temps, and all bets are off.  That's part of the reason chickens are often flash-frozen.

If you have ever been to the Philippines, then you know all that proper food serving temperature, warming tables, refrigeration etc is not real.

Refrigeration is needed due to the long times between laying and buying.  5-6 weeks from laying is possible.  Eggs kept at room temps are much more likely to spoil quickly.  Some say 1 day,  though anyone who raises chickens knows better.  A week is likely fine.  But it REALLY depends on temp.  An egg left in a nest for two days will go bad very quickly as opposed to an egg that is harvested soon after it is laid. 

 

Personally, I would not eat eggs older than about 1 week if not refrigerated.  

 

And for those who look at pack dates on the cartons... do NOT feel secure in those dates.  Many times, eggs are packed for one seller who fails to pick them up.  They sit in a cooler for days to a week or two, then are re-packaged.  Usually, the dates on the carton are wiped clean (if foam), or re-packed if fiber, and a new pack date placed.  So eggs that are a week or two old suddenly appear "fresh" again.

I agree with those here who said that the UK has better tasting chickens or other meat than the US. While I personally don't eat chicken and haven't since I was about 5, I have heard many people comment even in my family on the fact the chicken in the US is rather tasteless compared to ones other places. I think it could have something to do with the way they're raised, they just want everything big around here...in this case size not only doesn't matter, it hurts the quality.

 

That said, organic chicken is much better, and so are organic eggs.

I’ve eaten warm eggs up to a few days old, but as a kid, we typically either ate the eggs the same day, or refrigerated them.  If the eggs were around after a week or more, they ended up as food for the hogs or dogs.

In Europe eggs are not washed which preserves a protective antibiotic coating = refrigeration not needed. In North America they are washed at the factory = refer.

If your neighbor gives you fresh,  unwashed eggs they can stay on the counter.

We're comin' up on summertime in Texas.  That's when the farmers feed their chickens crushed ice to keep them from laying hard-boiled eggs.

I think we covered this very well on previous pages.

 

However, an unwashed egg on the counter will not last anywhere near as long as one in the fridge.  Take that same egg, leave it in a henhouse for one extra day (pick it the day AFTER it is laid), and that same unwashed egg will not last as long before turning as one that is picked same day.  Heat really hastens the destruction.

 

Another thing about warm eggs... when we raised our own, we always cracked our eggs in a small bowl, one at a time, and then added them to a larger container (say for scrambled eggs).  You never knew when you’d crack that one egg that ended up spending a few days in the henhouse, and WOW, that smell...
