Wondering whether to sign Maiden Name signature to match all my documents (passport/marriage certificate etc) or to sign new married name which doesn't match any of my Maiden name documentation.

Got married last week and filing tomorrow.

What did all you newly weds sign?

Even though I also wanted to send off our petition as quick as possible, including evidence of a bonfide relationship is more important. So I legally changed my name and waited for all those proofs (driving license, credit card etc) so I could send proof of my name change.

Will you be legally changing yours? If so maybe wait just a little bit and sign/submit your papers when you can show you've done that.

Use the name you plan to go by "from this day forward".  Anywhere it may say "other names used" then pop in maiden name. It may seem weird right now, signing that new name, but this immigration stuff lasts for years. At some point you would wonder if you should continue using your maiden name because you started that way, even though all your other stuff has married name. The USCIS knows you recently married. They have the date, certificate, etc. Happens every day for them dealing with marriage based immigration.

While this is correct, the foreigner need not SIGN the I-130a if they are NOT IN THE USA.  On both forms enter the name you plan to use now and going forward.  If that's different than before your marriage, you'll probably need a new passport in that name as well.
