American marrying Peruvian fiancee in Lima. What requirements?

Hi.
    I am 62 and my Peruvian fiancee is 60. Her job is transporting kids to and from school, so when the schools were out for the summer,
she came to my home in Jacksonville, FL for 2 months. Kind of a trial run to see if we wanted to go thru with the Fiancee or Spouse visa 
process. It was a definite yes! We've decided to get married in her hometown of Lima, when I fly there in May to meet her family and friends.
We then will file for the Cr-1 visa. (Any opinions on that one, as opposed to the Fiancee visa?)
   Anyway, she speaks very little English, but she is taking classes. I took 4 years of Spanish a hundred years ago, and am taking online courses,
refreshing my memory. We use Google translator a lot, but man, 1/2 the translations SUCK. So, when I'm trying to find out information from
her about what is required of me when we get married at the Municipalidad de Santiago de Surco, I am not confident in her answers. 
    She keeps saying something about I need to do a power of attorney, so she can continue with her forms in the US embassy there in Lima. When I go to the Municipality there online, and try to print things out, it comes out in Spanish, or I can't print them at all. When I called the Peruvian consulate in Miami, the guy didn't speak English, and when I pressed for another person, he hung up on me! Then, I tried the consulate in Tampa, and the woman there spoke a little english, but not enough to really help me.
    Can anyone give me some tips? We have 3 months to get all of this figured out. Sounds like enough time, but man, there is LOTS to do!

What forms at the US Embassy?  I cannot figure out what she is doing with the Embassy before you are eve married

I hate to say it but as mentioned above, something doesn't seem right.  She doesn't need a POA to do anything right now.  If ever.  You are the first to initiate contact with USCIS, and the embassy won't talk to her until the interview.  Right now the US Embassy has no business to do with her.

Oath: March 22, 2021 COVID-style same-day oath

 

Now a US citizen!
