Hello, 

I'm a student from Algeria, I've won a grant to attend a symposium in the USA, they sent me an invitation letter which mentions everything (the dates / days of stay (6) / my passport number / the areas where I'll stay))
In the Ds-160 I answered to " who is going to pay for your trip " that the organisation will and I've put their details. So will that be enough for me as financial proof ? what other documents should I take with me as a student ? Thank you.

Should be fine.

If you’re a student be sure to bring proof of continued enrollment in your university to your interview, as you’ll need to show that you will return home afterwards as well.

I would expect the credibility of the sponsoring organisation may be a factor, assuming they do this a lot they will also be able to guide you.

From what he said of the invitation letter it sounds like they do. I once got a similar visa letter from an educational institution,  they clearly knew everything that was required for the visa application.

 

Also possible OP gets one of those restricted B visas issued specifically to attend the symposium, rather than multi-year multiple entry.
