He can legally file for an extension.  Ask for a copy of the extension.

My joint sponsor sent me his irs tax return transcripts for 2014,2015,2016. He told me that he will file his 2017 taxes in october 2018 even though the deadline is in april 2018!!

What should i do in that case?

right now they are only asking for 2016, if he files an extension to file his taxes they might accept that, their might be a reason why he isn't going to file till October, even though the amount due is due by April you can file an extension of time to file taxes and not have to have them completed till October.

Total income is what you are looking for.  Also include an I-864a from the joint filing spouse.
