For a K-1, an I-134 is not enforeceable.  Only when you submit an I-864 for the green card

Not for the k1 visa using the I-134 form you are referring to the AOS using the other financial sponsor form. payxibka has it correct.

K1 and the I-134, not too responsible.

 

BUT if you are going to need them again as soon as you marry and apply for the greencard, then there is no getting out of being until the Immigrant works 10 years, becomes a US citizen, leaves the country or dies. That's even if they are the worst spouse and dump you, beat you, or divorce you. 

 

So unless you are  are going to have enough income right after you marry to sponsor by  yourself, you might as well go by the stricter I-864 rules for greencard applicants (your fiancé).

So I’ll likely have a job that will support us both once we’re married. Would I need to submit another form saying I can be the sponsor when he applies for the green card?

 

Or would it be simpler to go for the stricter I-864 and let them be our sponsor for however many years? (even though we probably won’t need them to take care of any financial needs)

A K1 visa uses I-134 addidavit of support. It is not enforceable so your sponsor is not committed for a certain amount of time. Once this visa is issued, you've come to an end of a process. All the K1 visa does is gets the beneficiary in the US for 90 days in which to marry. 

 

Then you marry and start a new process to adjust status from  visa holder to permanent resident. That will require a new affidavit of support (I-864) If you, the sponsor, have a job by then, you may be able to sponsor all on your own. When the time comes, review if you have the job and can get the proof of income that will pass. If not, then ask your K1 sponsor if they are willing to help again with the greencard process. Their exact commitment is written toward the end of form I-864.
