So my HR lady wrote up the employment letter, and put down I make approximately $22,000 a year which I seen I have to make $30k for a family of 3. Would this being on the letter be a negative factor in the whole adjustment of status filing procedure ?

The correct forum is always the best place to ask questions.  This is the K-1 forum not AOS

 

Nevertheless, this will have a negative to your spouses's I-485 because the USC does not meet the minimums for the affidavit of support

 

125% guideline for a household of three is $25,525 in 2017

Sorry about that still getting used to navigating the site.

That's better than 30k that I thought... So if it says that I made 25,000 something on my pay stubs for this year to date shouldn't matter what she put on the letter?

Use your 2017 tax return rather than the HR letter is it shows sufficient income
