What would be the procedure should we find out we are expecting and therefore would be moving with a child, and hadn't previously listed any children/dependents on i-130?

You can't list a child on an I-130 until they are born.  Would the child have a USC father?  If so, the child may be automagically a US citizen (assuming the USC meets the requirements to pass citizenship to the child) and therefore no visa needed

YMMV

No mother (myself) is USC and father is UK citizen - my thought is that declaring birth with consulate and applying for US passport negates any i-130 mention but just wanted to check as we may face this possibility! :)

Absolutely not.  This happens all the time.  You will seek a CRBA for the child when the time comes

YMMV
