Yes, your case is not typical.  But I would suggest when filing for ROC that you explain why you haven't filed taxes since being married.  Just to avoid an RFE.

Thank you, I will do.

Let your parents' statement include everything about your living rent free, use of truck, and specific things you have paid for. That way a lot is explained about your situation. It does not have to be notarized.

If these don't have both of your names on the receipts, then probably not of much value showing "jointness".

i think you have solid evidence. I wouldn't worry about getting the truck in you name just for USCIS. My wife didn't put my name on utilities, or on the deed for her house and we still passed just fine.  For the credit cards, since both our names did not appear on the statement we photocopied the cards side by side showing same acct number/each of our names. Cover some middle numbers so you aren't mailing off your full account number.

I understand your tax situation as explained in the first instance. It's fine. It would be goofy to file a tax return with no income, no W2, etc just for USCIS. The only reason to file 2015/2016 would be if you had any income at all and some money got held out for taxes. You could get that back by filing. It sounds like you had zero income those years so I wouldn't file either.  You will have your 2017 return to send. Good enough IMO.

My husband is a receipt hoarder, and thinks we need to keep every single receipt from everywhere we go.. but it's as I thought, there's probably not a ton of value in something that doesn't have both our names. I'm wondering if it could be helpful to have receipts that also match transactions out of our joint bank account or credit cards. Probably redundant, as it would logically be on the statements themselves. I thought it might be helpful to have receipts for things on particular days that matched photographs (like a trip we took to a winery for his mom's birthday). We did that sort of thing on our K1 application, but it might not be too valuable for this I guess. The banking thing was the first thing we did, so we have statements stretching well back to 2015.

We'll also likely have EOBs and health bills that I figure we could use.

Thanks for understanding.. I know it might be an odd situation. He had the EAD long ago of course but no one was even interested until he received the green card, which didn't come until mid year -- and by the time the job said they were interested they had strung him along for many months, and then literally called near Xmas to say you're hired, start first week of Jan. He's been happily working ever since. We're a close family that tries to take care of each other, even if it means sticking with my parents for now. I'm the worrier that's thinking ahead for him about this next set of paperwork, so I'm hoping we have enough. I've no problem in explaining to them the situation.

You put together anything you want. I personally think it's probably far fetched to think an adjudicator is going to match up your charges and receipts like an auditor or something.  The fact that you share a bank account and credit card and will file taxes together show you commingle money. How/where you spend it is not likely their concern. You could have taken a girl's weekend to the winery unless the receipt says Mr./Mrs. But photocopied on the same page with a photo at the winery works.   Do you ever write checks to pay for things? If so take turns writing them and make photocopies so they can see that the account is actually used by both rather than having two names on it with one not even having access to write checks. Do you each have ATM cards? Photocopy his/her matching cards.

EOB's are fine if they have both names on the same statement.  If not, one person went to the doctor. No real jointness there. Yes, you have the same insurance, but use the insurance cards to prove that.

It's just my opinion that overloading with a lot of extra paper that does not have both names makes it harder for them to see the variety of good evidence that shows joint names, joint access to the same pot of money, and you both live at the same address as shown on official documents like driver licenses, insurance cards, bank statements. (Those over a Hallmark card you address yourself to the other person.)

Your evidence is good and yes, add the affidavits from your parents about your living arrangements and add your own
explanation as well. Make it short and sweet, not overly lengthy.
Include a letter explaining why you weren't required to file taxes ( clip with the other financial docs/form).

Forget the receipts showing expenses unless it is a bigger purchase or event like travel etc., also include photos.
As to the joint bank statements, they like them from the inception of marriage on to current so make sure you include all
or at least every other one from the first joint one you have.
Looks good though.
