Does the joint sponsor need to mail the original I-864 form that they filled out to I the petitioner or can they send a photocopy of it ? 

Also, do they need to show an employment letter and show 6month pay stubs as for documents needed for Affidavit of Support ?

All we can respond to is our experience

my checklist said 

"this document sent to embassy and not needed"

but that was in 2015 July interview

they do change the process at times

 

best advise is follow your checklist  / i am assuming CR1 as you say I-864

 

also do a timeline and let VJ community know what embassy (country) you are dealing with as each embassy has its own rules

You might need to send the original copy to NVC and a copy for beneficiary to bring it to the interview.

IRS transcript for last 3 years,

proof of citizenship,

Employment letter (Good to add)

Pay Stubs (Good to add)

Letter from Joint Sponsor explaining your relationship to him or her

once correction on my previous comment. They can send a photocopy or scanned copy
