I have most of my evidence ready to file my petition and I’ve researched what this statement should include but I’d like to know if there is anything else I should include. It also says that this statement should be signed by petitioner and beneficiary, is it necessary for the beneficiary/ fiancé to sign the statement? I’d love to hear your opinions and your thoughts on the subject.

Yes.

you will need two letter one signed and dated from beneficiary and one from the petitioner. There are people who get rfe for not having the second one.

One letter signed by both can be done, but generally people do 2 separate letters. I would suggest the 2 letter approach as well (it's a tried and true process for that requirement for years).

The beneficiary's letter doesn't need to have a "wet" signature...she can print, sign, scan, and send it to you.
