What kind of checking do they do after the fiance visa interview? For example do they call the petioners job they put on the affidavit of support? I became unnemployed because I was staying with my fiance in the Philippines for the interview, but there was a problem with his medical and the interview got extended way longer than we thought. But my tax return and income was above whats required. So on the w2 and tax return meets the requirments

I've never heard of them calling an employer.  They do require you last years tax for (2016) and pay stubs.  It is hit and miss for them to even ask about income in Manila.  Be as prepared as possible and ALWAYS be honest with the CO.  They are well trained and may even ask questions they already know the answer to.  Just be honest with them but do not volunteer information.  Answer the question and do not expound on the answer.

What if they directly ask "Exactly how long was your fiances latest visit?" And he tells them 4 month. Or they ask "Where does she work? And he says I'm in between jobs right now. Will this result in denial?

Answer honestly.  If the visit was 4 months, say that.  If you are between jobs just say that.  Nothing more.  The truth will be better than any lie.  A lie WILL be grounds for denial.  Being between jobs may or may not be depending on the CO.  Worse case with the truth is they may ask about a co-sponsor.  Worse case with a lie is a flat out denial.  I believe you are fine as is.

Honestly, don’t worry about that. Everything will be fine.
