I am going to start the k1 process this week. 

 

My fiance is a Nepali citizen but has been living and working in Germany for 2 months. She is only working there temporarily and could go back to Nepal at any time when work runs out.

 

So what are we supposed to do when dealing with embassies? If I start now then they would expect her to go through the embassy in Germany... but could she finish the process at the embassy in Nepal? Or would she have to keep going back to Germany every time?

 

Any advice would be appreciated because the rest of the process seems pretty straight forward.

I don't know if you've found any answer since you've posted your question but I'm currently living in the UK (but I'm French) & same, I don't know exactly when I go back to France but in case we put on our application the French embassy. I'm not sure, but for what I've read at the time we filled the application, it was just easier to write down the embassy of your home country, so for your fiancée Nepal. 
You can still contact the service center that proceeds your case when she changes her address so they can make the change but it will probably add some delay to your case .. which nobody wants :wacko: it takes already to long lol !

I don't know if this was necessarily the right approach, but I solved my problem similarly.  My fiance and I filed originally in September, now waiting on NOA2.  Since my fiancé is an Afghan currently residing in Tajikistan, we'd originally planned to complete the process at the embassy in Afghanistan. We ran into a number of security concerns, though, in the months after filing, so we decided to change and file through Kazakhstan instead (which processes visas for residents of Tajikistan). I called USCIS, and they recommended just sending an addendum to the file, in order to update the case. So we sent a document to the California Service Center, which was signed by both of us, had our receipt number, date of original file, etc and which requested a change in the embassy through which our case would eventually be processed. I'm still waiting for NOA2, so I suppose we'll see if that was the right way of going about that situation, but it was what USCIS recommended.

Is there a deadline from when it's sent to the embassy and when she needs to go there? If not then I'll definitely put Nepal.

No there is no deadline. I'd say to put Nepal it's just safer, especially if she can go back anytime since her job in Germany is temporary ! The different centers are taking ages at the moment, it takes longer than before so .. just an advice :)
