Hi! I'm completely new to this process and I wanna make sure we do this right!

So next month I'm going to be meeting with my fiancé in Mexico for 2 weeks (due to circumstances, we could not meet in each other's countries). I've been in a relationship with this amazing Venezuelan for almost 2 years and known each other 8+ and we want to live the rest of our lives together here in the states (and he's willing to tolerate brutal northern Wisconsin winters for it!).

What should we be prepared for? We intend to start the process late December to sometime in January, but I know Trump is not too fond of Venezuela right now. What all steps can we take to help avoid a denied visa? And besides pictures, should we be preparing anything else? I have done some general research but I don't know anyone who's done this recently under these circumstances.

The K1 visa for Venezuelans hasn't suffered any type of ban or restriction so far, just make sure your fiance isn't part of a high position in the Venezuelan government or related to someone that is, otherwise you may encounter some issues getting approved.

Me and my now wife met in person in Panama so you both should be fine meeting in Mexico, just take a lot of pictures, save travel itineraries, hotel bookings with both names in it, plane tickets, pictures of the passports with the entry stamp to mexico and spend a lot of quality time together, also try to print all the K1 visa application forms, passport pictures, affidavit of support documents and take it with you so you can get all the papers together, it is hard and expensive to send things to and from Venezuela

Oh well that's nice to know, what a relief. He's a government employee, but no one special at all. Which forms should I bring with me? And is there a good camera app that can timestamp our photos that would be accepted by them?

Timestamps on photos are essentially worthless (they can be very easily faked). Photos are secondary evidence of meeting in person within at least once in the last 2 years ...good to provide, but things like boarding passes, passport stamps, receipts, itineraries, etc. are primary evidence.
