we are applying to remove conditions from my greencard next year in april or may. 

You do not have to have the same insurance as your spouse for the purposes of ROC. I'd mention it in your cover letter with an explanation that you have different health care providers due to cost. No one particular piece of evidence is strictly necessary - USCIS is supposed to look at all the evidence provided and to be able to tell from that evidence that your lives are interconnected enough to suggest that you are legitimately a married couple. If they're not sure, they'll ask for more proof, or call you both in for an interview to determine that in person. 

You certainly won't be denied out of hand for not having the same insurance provider.

It must depend on the province. In Ontario , I believe you need an address, therefore you need to be a resident.  I am not sure, then, about your case.
