Filed I-129F, but job information may need updating

My fiancé recently submitted the I-129F, and received NOA1 last week, however I have now started a new job so the information provided within the beneficiary section of the I-129F is no longer up-to-date, would my fiancé therefore be required to inform USCIS of this change in my employment?

There's no need for that. Just make sure your DS-160 has the most updated info :)

For my I-129F, K-1, AOS, EAD, AP and ROC detailed timelines, please refer to my timeline page :)

ROC filed on December 1, 2020, assigned to SRC, approved within 106 days on February 18, 2021.

Slightly inconsequential, since you will (in theory) not be keeping that job once you have crossed the border anyway. The beneficiary's income and assets are almost never an issue.

 

Personally, I'm not quite sure I even understand what the point of establishing a work history is on these forms. :P

I mean.... Later on you also have to declare that you're not a terrorist, but it doesn't mean that someone truly being dishonest would be honest on a form simply because they ask. Lol.
