I hold an Indian Passport but reside legally in the United States on H1B work visa for more than a year now. My visa ends on Dec 2017 but the extension process is already initiated. The extended visa will be valid till Dec 2020.

The Zumba Cruise 2018 (Royal Caribbean) is planned for April 2018 and starts from Miami through Costa Maya, Grand Cayman and comes back to Miami in 7 days.

I need to know what all documents in terms of visa, travel insurance or any other documents are required in my case to attend the Zumba cruise.

According to the Cayman Islands travel requirements, cruise passengers do not need a visa.

This is not correct. Cruise passengers are the exception. The best thing is check with RCCL or your travel agent. If you have a Resident permit and a cruise ticket, you are good to travel. You will however, have a full US Immigration check back in Miami when you return.

That is unless you get Global Entry

When/Where are you getting your new visa?  What has been applied for is an extension of status, I'm sure.  That means, as long you are in  the US, you are still in valid H-1 status. However, any time you leave the US after December 2017, you will need a new H-1 visa to reenter.
