I LOVE mezcal. Oaxaca was amazing because it's basically where it originated from, and we went to some of the factories/ mezcalerias and learned about the process and tried a lot of samples, how different they taste depending on the type of agave. I even tried an aged one (10 years) it was so smooth. Mezcal < tequila, any day in my opinion

breakfast: organic scrambled eggs with spinach and onions, nopal tortillas. 

Snack: Granny Smith apple with Tajin powder 

Lunch:  tapioca/potato flour sandwich with hummus, spinach and a bit of goat cheese  

Dinner: couscous with zucchini, tomatoes onions, artichoke hearts

 

what do you guys like to cook/have when you're trying to eat healthier?

what do you guys like to cook/have when you're trying to eat healthier? 

I try not to eat too too healthy because then I binge on unhealthy things.   Healthy eating for me is more like steaks, marinated grilled pork chops, grilled chicken on a kale/spinach salad with strawberries/apples and walnuts, stir fry with beef/green beans/snow peas/carrots/broccoli on soba noodles, california rolls (I finally found a fresh source in nearby big town - you have no idea how happy I am for this), apples, more apples, nectarines/plums/grapes/blackberries/bananas, zucchini and corn sautees.... well, you get the general gist of it.

 

My preggo and kid friendly version tonight was whole wheat french toast with banana.  I tried to find some other fruits, but local market only had bananas and apples.  Can you tell the Dane is having another day where he is gone 13+ hours?  The man refuses to believe that a meal can exist without meat.

haha I'm sorry :D

 

I'm trying to cut down on meat, but I love fish, so for now I'm still having salmon and tuna a few times a week.

and I absolutely adore sushi.

you mean animal protein? because I still met the requirements :) 

Chickpeas/ lentils/beans are a core part of my diet, plant-based proteins. 

I stopped eating meat/chicken, but I do have fish a few times a week.

I have a somewhat sedentary life right now, I'll up my intake accordingly once I start exercising more. 

 

Also according to myfitness Pal I only went above my carbs goal by a small ammount. 

Portion control also has to do with it, the sandwich was small and my cous cous portion as well. 

carbs are not the enemy as many seem to believe, but I will definitely cut down a bit. 

I ran out of time for lunch so I had the sandwich instead of fish with veggies, which I'll have tomorrow.

I'm not big on food. In the sense that we eat properly, cover all the ordinary bases, but I sure don't have the patience to fiddle about with the components of any given meal the way genuine foodies do. We're plain people, we eat simply.

I can explain it to you. But I can't understand it for you.

Things my MFP tend to have way too high of carbs on a daily basis especially for those who are sedentary.  Your body uses carbs for energy.  If you aren't doing anything, that energy will simply be stored.  If you're trying to lose weight, eat no more than your body weight in grams of carbs per day and lower it on a weekly basis as you release the weight.  Our bodies do not process non-animal proteins as well as animal based ones so your variety will have to match it, however be aware that you will thus be in-taking more carbs because of that.  You may need to fall back onto a protein powder.  Pea based is a good one for those who do not want to eat whey.  

Judging by your previous comments I figure your basal metabolic rate probably puts your daily calorie goal at 1480 to function.  Eat at least this in calories per day.  I would not go over it by more than 150-200 calories.

And that's perfectly okay for someone who's just living life to live it.  If you don't want to pay attention to it, then don't.  It's a choice and a lifestyle to pay attention to the actual nutrition of the food and many people don't need to bother if they paid attention to portion sizes and the content of their food (more veggies, less sugar)

I'll look into a pea-based protein powder, mostly whey like you mentioned which I don't like. we don't have a lot of options in Mexico but if that is the case I will ask my husband to bring me one, maybe.

I'm staying at the 1500 margin right now, but I can't go much lower without feeling a bit sick. My only real option I know is to actually start exercising to burn the stored energy that I have been so lovingly keeping with me all these years, hah. I do some yoga/pilates but I want to start some cardio in a month or so, I'm recovering from an injury.

That's completely fair! I try not to fixate too much, but I realized I wasn't eating enough veggies and fruits, and processed food /too much flour and dairy made me feel bloated and tired. I'm mostly trying to be more conscientious of what I eat so I can improve the way I feel. I'm also a recovering bulimic/emotional binger, so it's a daily struggle to not succumb to it. But I'm going strong!

yes, completely agree. And I have a sweet tooth, and love baking myself! the good thing is to keep trying/start again and not give in completely. Unhealthy things once in a while are okay, as long as they don't constitute the majority of your diet, I believe.
