So the Dane is over there scraping popcorn ceilings at my mother's new house rather than finishing the projects I've requested him to do at ours before the baby comes.

Moved. In the cold, and pouring down rain. Everything is here, somewhere.  My Husband found the Charlie Brown Christmas tree, and put that up. That's all we will be having by way of decorations. I feel like chewed string this morning,

baking experiments part 1:

 

I totally should've known that soft pears do not work for poaching. I made a nice mess.

So that tart was out!

 

Experiment part 2:

Mascarpone sounds fancy, but it's such a bland flavor. Added rum and salt and now it's WAY more interesting.

the chocolate ganache will also help balance the flavors out.

 

Experiment part 3:

My panna cotta is a little sweeter and one-note than expected, so I added some apples tossed with caramelized bacon, pecans and cinnamon to add flavor and a bit of bite. 

I know people don't usually eat bacon with dessert, but it pairs so well with apples and cream! also, candied bacon is very addictive.

 

Experiment part 4:

I made two of my lime cheesecakes. They're so simple to make so I'll give you guys the recipe. We call them ''carlotas'' in Mexico and it's a great, simple dessert to make with kids. My pie is the slightly  ''elevated'' version, which includes eggs and baking but you can do it without baking, with unflavored jello or even without it!

 

For carlotas: you just need: 1 lechera  can(or any condensed milk but I really recommend this one) 

half a cup of evaporated milk 

maria cookies (or any form of simple cookies, not too sweet) and you make a crumble with them. 

the juice of 4-5 limes.

1 philadelphia cream cheese pack (or any other brand of your preference) 

You mix/blend the lime with the chilled lechera, then add the cream cheese and the evaporated milk

and add to the crumbles in a cup, refrigerate for a few hours or overnight and that's it! so simple. 

 

For the pie I use a store bought cookie base (or sometimes make my own if I have time)

 I add the same ingredients above, then add 2 eggs, and some skin from a peeled lime. 

 

 

it's delicious and so damn simple. it's a nice change if you want to taste cheesecake with lime instead of vanilla. You can add another citrus as well.

Did remaining Many (2+1) laundry loads today, double that for the weekend man.

Finished purging linens for donation, oj tak oj tak Many bags full man.

Thought for a while that we were coming down with something, ill-feeling we man.

Constant aspirin seems to have kiboshed that, thankfully man.

 

We were to have gone to a neighborette's casa for din-din this eve, plan man.

However, daughter-of-neighborette called in panic to report a kitchen accident, emergency room man.

Nearly Many hours later, got green light to go for din-din, delighted we man.

Neighborette's left index finger bandaged/splinted like an illegitimate male child, sight to behold man.

'Twas a blender accident, hand-held variety man.

 

Neighborette spent Many (2x2x2-1) -- yes, MANY (2x2x2-1) hours in Emergency, poor thing she man.

Has caucus with surgeon on Tuesday to see if she'll lose first joint of her finger, hope not man.

Neighborette is sweetest, loveliest thing, and we want her to remain in as few pieces as possible, intensely man.

Before din-din, went to Target, nothing there man.

Went to Dollar General, open man.

Found Many (2+2) half-of-half-gallons of Peak full synthetic Dexos motor oil on clearance, snap them up we man.

T-B.- and Mrs.-T-B.-mobiles each take Many (2+2+2) half-of-half-gallons per oil-change, needed 2 more man.

Went to another Dollar General, open man.

Found Many (2x2x2) of same oil on clearance, jackpot man.

Asked for price-check at register, hopeful we man.

Dratted stuff rang at full price, nertz man.

We bought 2 anyway just to have enough for one oil-change, still came out ahead man.

Also found a Batman pullover hoodie for Mini-B., favorite superhero of wee man.
