No, the K-1 is a single use visa. Once she exits, she cannot enter again without a new visa (likely another K-1 if unmarried or CR-1 is you marry).

 

Edit: To add to the above...she can enter, marry, and file for AOS + AP (+ EAD to work). AP is taking about 4 months or so to be issued. AP will let her leave the US and re-enter.

Your fiancee's K1 visa is only for one entry into the US.  If she leaves the country she will not be able to let back in.  You will need to file for AOS as soon as you guys are married.  You can do an Advanced Parol and permission to obtain employment at the same time for the same price as the AOS.  The AP will allow her to come and go as she waits for her green card.  It will take about 4-5 months to process the AP and permission to work, then about 4 months later she will receive her green card.

Maybe you should read up on the process of the k1 and what happens after the arrival. You don't seem to know much about it at all.

This is sort of what my fiance and I plan to do. She is from a small Indonesian village (but lives in an industrial city now). Once the Visa is approved, we plan to do a little family vacation with her parents to Bali. It's the same country, but a different world. For our actual Honeymoon, I'm hoping the timing works out so we can go somewhere in the US that still has a good bit of snow since that's something she's never experienced and we also don't get much of in my city.
