I did an adjustment of status for my wife, initially it was rejected due to not having the right fees, now it has been accepted but they need more documents for evidence of income. I have a co sponsor but my income was the one in question. I have only been working at the job since June and its commission based, I put on my app that I should make 25k this year but my commissions haven't been adding up to even half that amount. They asked from a letter from the employer. About my start date, salary, future job potential and six months of pay history and last years tax return. My employer shot back what typical first year salaries look like and that it was a performance base job. Should I be concerned that my income doesn't match right now cause it is slow or will they just go off my co sponsor information? My cosponsor has two dependants but a $47,000 a year job.

If you have a cosponsor then your income doesn't factor in at all. Cosponsors are for people whose income isn't enough that's the point. You do still need to submit your tax info.
