~~moved to AOS from work, tourist, and student visas from Tax and Finances.  Topic is about affidavit of support for adjusting status, not about filing taxes~~

Firstly, your wife will need to meet the poverty guidelines in income as outlined in the I-864P for you to be granted a green card.  Or she needs to have enough assets.  Or she needs to have a joint sponsor, someone who is also willing to sign an I-864 who meets the poverty guidelines for their household size plus you.

Secondly, if she didn't file because she was unemployed or didn't make the threshold to file, she writes a letter stating that.   It's okay for her not to have filed is she wasn't required to, however if she was required to, she would need to back file before your adjustment of status could be granted.
