On form I 131 Part 2 asks for "Application Type".....what would I put there?
In case you're not familiar with me, my Canadian husband is here in the US with me. We are sending in the I 130...I 485.....I 693....I 864....I 139a....I 765 and the I 131 in all at the same time (I was told that was best by someone I spoke to at the USCIS call center).

Before you go down that road, I would double check passport stamps and all email accounts/accounts you might use for travel, like Priceline. If you can find flight or hotel information, that will be very helpful. Note that most forms only require the past 5 years of travel. If you've been through everything and still can't find it, I'd include approximate dates with an explanation that it's an estimate as the original travel information wasn't available.

Pro tip - Once you've filled out the form, make sure to keep copies at every step along the way so you already have the travel dates, employment, and addresses recorded without having to look them up again. It saves a lot of time and as the years go by, it gets harder to pinpoint the exact dates.

He doesn't have any stamps in his passport as he's always came to see me in Ohio by car at the Detroit border crossing.
He just wants to be able to travel if needed while the immigration process is going on. We are sending all our forms on Sept 29th., his mom isn't in the best of health and if something were to happen he wants to be able to go see her in Toronto.

For the I-485, if he is 14 to 79 years old, then the biometrics fee is required. Total: $1225

There's no fees for an EAD or AP when filed with (or due to) an I-485.

So there is a biometric fee for the I 131 too? I'm reading the instructions over and over and I see it for that for as well.
