Currently my fiancé and I are waiting for our NOA2, which should arrive this month but my question is that after she comes into the country and we get married how long would she have to wait to be able to exit the country and how long would she be able to be out of the country. The reason for this is that her mother is ill and she would like to return and be by her side. P.S She is coming from Mexico.

She would have to wait until her EAD and AP is approved. Which can take several months. She can possibly expedite it due to her mother being sick.  (But it's not necessarily an emergency to expedite if she knew she was sick and left; unless her condition possibly worsend)  The fact she even wants to come right now, seems a bit shocking.  What's the point in her coming if she wants to just turn around and leave? How long is she wanting to stay gone for? Maybe you should try and delay k1 the process for a bit

The thing is that I understand the conditions her mother is in, I just want to know that if anything happens she will be able to leave the country and return to the US with no problem. Just another question how could one delay the K1 visa process if maybe for just a couple of months?

Upon entry into the US, if she wants to travel after marriage, she will need an approved AP. Currently the EAD + AP combo card takes a few months for issuance upon submission of application.

The I-129F NOA2 is valid for 4 months. She just needs to get her interview done before the end of those 4 months. However, if she needs an extension for the NOA2 and wants to do her interview beyond those 4 months, she can try to request for an extension from her embassy but I cannot be too sure as to how willing they might be to grant her one. Reason I said that is because just yesterday/today someone posted their embassy (not CJD though) wouldn't allow NOA2 extension

ETA: And oh, her K-1 visa validity will be 6 months (usually starts from the medical date) so she doesn't actually need to enter the US immediately. She will be able to look after her month for at least 3-4 months easily and then enter the US before her K-1 dies.

If something were to happen, as far as her condition worsening or something unfortunately worse, she can possibly expedite. But that takes some time as well, and it won't happen overnight. You can also try to schedule an info pass appointment if it is an emergency, (it must be an extremely urgent situation) and you will need to bring supporting evidence of that.  You can always just delay sending your documents and scheduling your interview for a month or two. If you need more time than that, as stated you can see if the embassy will extend it.
