So my 90 days before my 2 year permanent residency is on October 1st, and I'll be sending in my application for my new passport (Canada) likely within the next few weeks. I obviously won't have my old passport with me since I have to send it in when I'll be putting the Removal of Conditions application together. Will that be an issue? Even for say biometrics or an interview and I still don't have my new/old one yet?

I have selected to have my old passport returned to me in the event I need it since my K1 is in there and who knows if I might ever need that for something immigrated related. Thanks in advance!

Not an issue.  You'll have your expired green card and state ID.
