We mail in our Support Documents (Affidavits of Support and the various documents with the checklist and everything) to the national visa center over a month ago now.  When I do a status check it still shows: "ACTION REQUIRED:  SUBMIT REQUESTED DOCUMENTS"

It it normal for this to be the case?  When you submit these support documents should there be an e-mail or some type of notification that they were received?  According to the timelines of people applying from the same country and region as us, their cases were processed within a month or so, so this is very disconcerting.  Thanks for your help.

Yes, it is normal. You will only see a difference status if you get RFE or if they approved your case. Anyway, a month is only 4 weeks while their current processing time is 11 weeks, so you have about 1.5-2 months to wait before you find out.
