Im really not great at how this web page works, but I need to ask about the Cover Letter for the K-1 I-129f Visa form. I am seeing and reading many different examples and many different requirements about what is actually required to put in the letter.  I have seen some examples simply stating that each person, beneficiary and petitioner, must write their own letter stating that he/she has the intention of getting married within the 90 day period.  Some have said you must put how we met, when etc....Our love story.  Other examples have been very short and to the point saying we have the intention of getting married.  Can someone clarify how the cover letter must look like? Do we both need to make one?  Or would one be OK with both of our signatures?  What is it required to entail?

The cover letter lists what evidence you have provided to support the I-129F form. What it sounds like you are referring to is a "letter of intent" to marry once your fiance gets here. Yes, both parties need to create and sign their letter of intent. I found a sample online and modified it for my specific case. A statement of "how we met" are highly encouraged, as the USCIS wants to see that the relationship is real. I sent in some samples of Facebook messages, Skype chat and call logs and QQ international chat logs. I hope this helps and wish you luck.. Make sure that any signed statements (you created) are done with blue ink, as well as sigs on the I 129 itself.

Also, his letter will be written in Spanish which I know needs to be translated.  Am I authorized to translate the letter or does it need to be sent to some professional?

You can translate the letter for your fiance provided that you are fluent in Spanish. After translating the document, add a certification by translator to the document. Here's a sample:

CERTIFICATION BY TRANSLATOR

I, your name, certify that I am fluent (conversant) in the English and Spanish languages, and that the above/attached document is an accurate translation of the document entitled name of document.

Name: your name

Adddress: your address

Date: mm/dd/yyyy

I did a screenshot of such chats a logs, copied the image to my flash drive, then had a local shop enlarge them and printed out.

It does seem overwhelming at 1st, it seems to get easier and make more sense as time goes on. I took my copy of the I129 to a local business that handles immigration papers, for $100 they viewed the document, advised me to make some changes. It was worth the money compared to hiring a lawyer to do it.
