If they ask (which is unlikely) to see your wife's passport, and then ask why you don't have it---just tell them she is travelling..obviously she needs her passport ON her then.  If you need to feel more at ease, then bring a copy of her travel itinerary along with the copy of her passport. :)

Funny story...during an interview I read about on another forum an applicant was asked why she didn't have her husband's original driver's licence to show during the interview (the spouse's driver's license was not one of the required documents to bring to the interview).  The woman was applying under the 5-year rule, btw.

 

She told the adjudicator that her husband drove to work this morniing, so she didn't have access to it right now, and produced a photocopy that she happened to have in her evidence binder.  Adjudicator apparently got angry and stated "well you should have brought his driver's licence with you today, since he couldn't come!!"  (the spouse is not required at the interview).

 

Applicant politely leaned forward and said "I couldn't bring his driver's licence because he needs to carry it with him when he's driving to work".

 

She said the IO had this deer-caught-in-the-headlights look on his face for a moment and then quickly moved onto the civics test without another word about it.

I had my interview on August 9th at Federal Plaza in NYC and the only things I was asked for were the most recent joint bank statements and our 2016 tax return(which makes sense since I applied under the 3 year rule and they are making sure we are still financially co-mingling as proof of a bonafide marriage). My husband was not present and I did not bring any of his ID's/passport with me. Why would I? If someone questioned me about my husband not being there or that I should have somehow known to bring his ID's, I would have told them that the interview notice did not state any of this. I don't routinely carry my husband's wallet or passport with me. I am not a mind reader either. 

What I am trying to say is that you should bring the items that are listed on your interview notice. Beyond that, if there is any doubt about the validity of your marriage or any other documents they they need in support of your application, they will let you know. I would not overthink it. I'm sure you submitted a mountain of documents when you first applied for "adjustment of status" and then "removal of conditions". Answer the questions and don't create some elaborate story about why you don't have this or that with you. If it's on the interview notice - have it with you. If it's not - don't. Good luck!
