We are currently in the process of the K-1 application with out NOA1 returned on 5th June.

 

It has only just occurred to me that my UK passport expires in January 2019 - how hard is it to get a renewal if I'm living in the US at the time and also how do I go about renewing my visa on new passport?

 

Would it be advisable to apply for a new 10 year passport prior to interview at embassy although obviously that would mean a change of details and also, i intend to visit in September and then November?

You do not renew a K-1 visa. It is a single entry visa. By the time your current passport expires, you would have long entered and gotten married in the US, which means you no longer need it. 

 

A passport's expiration date does not affect a visa's validity :) If a passport has expired, you can carry it along with your new passport and show the unexpired visa that's attached to the old passport to an immigration officer. This is generally speaking.

 

If HMPO allows people to renew their passport more than 1 year in advance, then might as well renew it to a 10-year passport now. When you're at the K-1 stage, just input your new passport number in the DS-160 or if it's changed after you have submitted a DS-160, you can tell the consular officer personally at your K-1 interview.

Get a new passport now, that'll save you a lot of trouble later on. Just make sure to take copies of the US stamps in your old passport (if you have any) if you're not allowed to keep the passport when you get a new one. I assume you already sent copies of the stamps with the i-129f if you have any, but it's always good to have extra copies, USCIS tends to lose things..
