Whats the the best way to go about canceling the k1 so I don’t have two pending visas simultaneously? All examples I can find online are from couples who separated, not for married and want to change type of visa.

CR1 takes 12-14 months. If you don't mind that, it will be fine. But if that matters to you, she could AOS now and get AP/EAD in 4 months. At that time, she could travel back to close her matters in her home and then go back to the US. 

 

To withdraw you send a letter to the field office your K1 is at right now. You mention you want to withdraw the petition. Send a copy of the receipt notice for the K1 and you will be able to check with the number the outcome. 

 

If you still want to do CR1 you can probably file at the same time as you withdraw the K1. 

 

You cannot transform K1 into CR1. You basically have to start again, maybe that is why you are just finding stuff about people who separated.

Just to clarify, by that I mean you can send the package for the CR1 and the same day (or a few days earlier) you can send the letter to withdraw the K1. I didn't mean you could send everything in the same envelope.
