My fiancee and I met on 2/1/15 on Facebook Messenger, but as commonly happens, we both changed FB accounts, deleting the old ones. Hence I have only about a year of chats from which to select, print, and include with our I-129F. In many of our chats we discuss meeting and the actual meeting date. We always celebrate the "month-iversary." Will those discussions suffice as "proof" that we have known each other for more than two years?

Those are good to include as evidence of an ongoing relationship ("front-loading" your petition), but are not evidence of meeting in person at least once within 2 years. They need verifiable documentation for that requirement - passport stamps, boarding passes, receipts, photos (secondary evidence), etc. Talking about meeting can be included, but is insufficient in itself (anybody can say they met). Keep in mind the requirement is to show that you have met in person at least once within the past 2 years, not that you have known each other for any period of time.

Have you actually met in person yet?

There is no requirement on the length of the relationship. I have seen K-1 applicants who have known each other over 30 years and some who have known each other 6 months. But all applicants MUST have met in person within the last 2 years. Now, how long the "meeting" has to be is also a matter for debate. There have been applicants who have spent less than an hour together, without touching, and in the company of chaperones because of their religious beliefs.

I think the avatar photo is them together so they must have met

Should be noted that you DO NOT have to include a year of chats in your I-129f application. It slows the process down for you and everyone else behind your application. This kind of evidence is not needed whatsoever at this point.

They only care that you've MET IN PERSON within the last two years. They don't care if you've known each other for 2 years, 10 years, or 50 years as long as you've met in the previous two.

Supporting evidence of this can include:

  • Dated photos of you together (if your camera doesn’t put an electronic date on the photo, write it on the back, and also write where you were)
  • Copies of boarding passes (plane tickets are not good enough as they can be purchased and never used).
  • Copies of passport stamps where you traveled to see each other (I-94 record is also proof of this)
  • Credit card receipts or receipts from a third-party story that show you spending money while staying in the same place together.

All of that additional information can come in hand much later when proving an "on-going relationship" for interviews, etc... but right now it's of no use to the USCIS.
