In general, I suggest not sending pictures from any sort of engagement party. The exception are in countries where engagement parties are an expectation in the local culture. It's possible they will misconstrue the engagement party as a wedding party. Photos out with family and friends are great, but anything that could even be remotely confused with a wedding party/reception may just create confusion.

All you need is evidence of meeting face to face at least once in the last two years and a letter stating that you are free to marry and intend to marry xxx (name of other person) within 90

days of his/her arrival in the USA. 

 

Rings, Facebook status updates, parties etc are not necessary. Being engaged is not a legal status. It's possible to be intending to marry someone without a ring or a party or a Facebook account. When my husband and I decided to get married I had no ring (we would rather spend our money on plane tickets to spend as much time as we could together as we felt that was more important for our relationship than a piece of jewelry), no Facebook account and no party. For us it wasn't an event, more an evolvement of the relationship. Having a ring doesn't prove anything other than you went to a jewelry store and made a purchase.
