Welcome! My suggestion as a former K-1 applicant who relied greatly on this site would be to start by reading this guide. It will answer most if not all of your preliminary questions!

Processing times vary but currently most of the service centers appear to be processing the K-1 applications filed in December 2016 and January 2017. So right now it's about an 8 month wait.

You can use this list I attached to this comment. It's almost the same list that I followed from last year, but this one is more updated. 

The timeline varies now as there has been a huge backlog on  the process due to an increase in the number of petitions being processed. I think it now runs from 6 to 8 months.

Once your mail your application to the Texas lockbox, it will be directed to a particular service center depending on which state you live in. Each service center handles multiple states, but the processing times for each service center are roughly the same -- about 7-8 months. So your processing time will be very similar regardless of which state you live in.

@Eric kim FYI, Items 53 and 54 are asking about in-person meetings. Therefore, my personal advice is to answer them as is. 

 

Also, evidence of meeting should come from both the petitioner and beneficiary. If the beneficiary has visited the petitioner in the US, provide a copy of the B2 visa page, passport stamps and I-94 record from CBP website. If the beneficiary has traveled to a third country to meet or traveled with the petitioner to a third country, definitely provide a copy of the passport stamps too. Aside from passport related evidence, if the beneficiary has receipts, tickets and bookings from the meetings with the petitioner, include them too.

 

USCIS is currently adjudicating and approving petitions filed in April 2017 along with the residual leftovers from months prior to that and soon they'll start with May 2017. Average time between NOA1 and NOA2 is at least 3 months. However, sometimes it can be a bit less or it can be more than 3 months if they have backlogs, your case adjudicator is slow or on vacation, still running checks etc. After NOA2, add another 1-3 months to the time for transfer of case file between USCIS, NVC and the embassy, receipt of Packet 3, medical, application for various required documents and interview. At this stage, it depends on how fast the petitioner and beneficiary can gather their documents and what's the earliest interview date available at that embassy.

 

If you are submitting in August 2017, there is a possibility that it would be adjudicated around November 2017. Do not pay for flight tickets or non-refundable wedding booking deposits or quit your job before the visa is in the beneficiary's hand.
