Confusing Email from Embassy Re: K1 Interview Appointment

Hello,

I'm applying for the 129F K1 Visa for my fianceé who is in Ireland. NVC sent the application to the Dublin Embassy on July 6th. Only July 10th, I received an email from the Dublin Embassy stating the following:
 

"You have an upcoming Immigrant Visa interview appointment at the Consular Section at the U.S Embassy in Dublin.

 

You must confirm through this mailbox that you have read this email and that you have all the listed documents in your possession for your interview. Please do so as soon as possible or your appointment will be canceled. "

 

The remainder of the email lists all of the documents that my fiancée must bring to the interview, BUT we were NOT given an appointment date/time in this email. We do not yet have all the documents ready. We hope to have the documents ready in 2 weeks. My question is the following: 

Should my fiancée be expecting a packet in the mail with the interview date/time? OR will this interview date/time packet only arrive once I send an email back confirming that we have all the documents in order?

 

Can I respond to the email confirming that I've read it but still do not have the documents?

 

How much time do I have to respond to the email? They say ASAP lest your appointment be cancelled.

 

This email is really confusing us. Many thanks for your help,
